Have I ever told you I love carrot cake? Don’t get me wrong: there are so many lovely cakes out there… chocolate, red velvet, pineapple upside down cake… I could go on. But there is something charmingly delectable about carrot cake and cream cheese frosting. It’s not afraid to be different, and it has no intentions of being perfect. Delicious and satisfying is the goal — no pretenses, nothing showy. Just pure, old-fashioned dessert.
My lovely friend Shaye over at The Elliott Homestead gets me. In fact, she fully embraces carrot cake’s roots in this rustic recipe full of real food goodness. If you aren’t craving carrot cake by the end of her video, well… I’m not entirely sure you’re human. 😉
Here’s her incredible healthy carrot cake recipe:
Hello fellow food enthusiasts! So glad to meet you… even if it is digitally. I’m always humbled by the community that exists around a common love for good food. Which is obviously why you’re reading Elizabeth’s blog in the first place! It’s a beautiful place to hang out and be inspired. I’m humbled she’s invited me to share in a bit of that love.
I brave my honeybees to make this deliciously authentic dessert, but you don’t have to! Honey is the secret weapon in this rustic carrot cake and its cream cheese frosting. Who knew eating vegetables could “bee” so sweet?
